THE HISTORY<\/strong>
It all began in the earliest of 2000.
Avantis Estate\u2019s winemaker, Mr.\u00a0Apostolos Mountrichas\u00a0fell in love with Santorini and the strong personality of\u00a0Assyrtiko, realising the potential of\u00a0Assyrtiko, he started his\u00a0Santorini project\u00a0in\u00a02012.\u00a0He completed his project in\u00a02021\u00a0by founding\u00a0Anhydrous Winery. His\u00a0philosophy\u00a0relies on\u00a0experimentations\u00a0in\u00a0ancient wine-making techniques\u00a0that produce\u00a0modern wines\u00a0with\u00a0purity\u00a0and primary varietal characteristics. Wines that reflect the\u00a0connection\u00a0to the\u00a0Santorinian anhydrous\u00a0land, the majesty of the island, the\u00a0volcano, the sun, the sea breeze, and the Cycladic air \u2013 the intense personality of this unique\u00a0PDO\u00a0land. High-quality wines sealed with\u00a0the raw beauty\u00a0of Santorini. These are the\u00a0Anhydrous wines.<\/p>\n

THE WINERY<\/strong>
The Winery is located in Exo Gonia village. It is exclusively their wine production area. The visiting area of the winery \u2013 the\u00a0Anhydrous Cellar Door\u00a0\u2013 is located in\u00a0Fira\u00a0within a 10-minute walk. It opens from April to October for\u00a0guided tours, tastings,\u00a0lunch\u00a0in the\u00a0restaurant, and\u00a0cooking lessons.<\/p>\n

SOIL<\/strong>
Sandy composition \u2013 a mixture of terrestrial land, lava, and pumice, of volcanic composition. It has an age of 3600 years.<\/p>\n

CLIMATE<\/strong>
Mediterranean climate with strong summer Aegean winds, the Meltemia, and\u00a0low rainfall. The vines are \u2018irrigated\u2019 by the atmospheric humidity of the caldera\u2019s sea mists.<\/p>\n

VARIETIES<\/strong>
Assyrtiko\u00a0produces volcanic wines with high acidity, purity, and minerality, with a rich character and long aging potential. Other indigenous grapes are\u00a0Athiri, Aidani, Mandilaria, and Mavrotragano.<\/p>\n

OENOTOURISM<\/strong>
Our wine tourism is included in the \u201cmust do\u201d list of Santorini.
Based on authentic Greek hospitality, with our team\u2019s cordial generosity and friendliness, we welcome all the Winelovers into a different wine-tourism model, dedicated to\u00a0wine culture. The old roofless cinema of Fira was transformed in 2009 into our quiet Cycladic courtyard.\u00a0In that area, between the large\u00a0oak\u00a0and concrete oval\u00a0tanks, the guiding tours, the lunch, and the cooking courses take place.
In the\u00a0Afoura cellar\u00a0(\u201cAfoura\u201d refers to a large oak Santorini barrel), the visitor unfolds the Santorini tradition, along with the clay maturation amphorae. Anhydrous Cellar Door offers wine tastings with our \u201ckalosorisma\u201d dip (small welcome complimentary appetizer), or in a combination with Greek\u00a0meze\u00a0appetizers,\u00a0cooking courses,\u00a0private\u00a0wine tastings, or private meals.\u00a0Anhydrous Cellar Door\u00a0is located in the southern part of Fira just a\u00a010\u2013minute walk\u00a0from the center of Fira.<\/p>\n

The first time where the bond between wine \u2013 wellness is so strong. In our yard, a place of relaxation and wellness is been devoted, where the therapist offers the Oenotherapy Lenga face, and body grape ritual. Lenga Grigoriadou\u00a0is a wine lady. She has been married to the winemaker,\u00a0Apostolos Mountrichas.\u00a0One of her greatest achievements was her innovation in 2009, where she combined the antioxidant power of the two-family wineries in Mainland Greece (Avantis Estate) and in Santorini (Anhydrous Winery) wines by-products to wellness. Thus, she created the first wine & grape Greek cosmetics that embrace the skin with green active ingredients, luxurious textures, and grapey aromas, inspired by the wines of the two wineries. In the wellness area into the Cellar Door (since 2019), our therapist offers an amazing grape therapy ritual. Indulge yourself, and become one with the deep blue Cycladic sky, the blue of the Aegean, and the green landscape of the Santorini vineyards.
